WHITE

We have attempted to describe the taste of our wines, but it is difficult to do as it is a very personal experience.  You might pick up different tastes or aromas to those described here.  The main thing is to enjoy it, so try a bottle and assess it for yourself.

Italian varieties have a different range of flavours and aromas compared to most Australian wines.  They are good to drink by themselves and are excellent with a range of foods.

Red varieties such as Nebbiolo have more savoury characters and are not as fruity or woody as most Australian Shiraz or Cabernet.

As we have chosen a screw top bottle for all our wines, you can screw the cap back on and the wine will keep in the fridge for up to a week.  We have actually drunk our opened bottles of red wines that were kept in the fridge for 2-3 weeks and they were still quite fresh.

We make very small quantities of all our wines and they sell out quickly, so if you want to taste a particular wine, please contact us and ask to be placed on our mailing list.  When we are about to bottle a new wine we send a letter to everyone on our mailing list and give them first option of buying the wine before it is released.

VERJUICE

Verjuice is the unfermented juice of grapes picked before they are fully ripe.  We have made a white verjuice from Chardonnay grapes and a pink verjuice from Nebbiolo grapes.

Verjuice can be added to soda water or sparkling mineral water for a refreshing drink; it can also be used in salad dressings and recipes in place of lemon juice or vinegar or for deglazing a pan after cooking light meats to produce a delicious sauce.

Once you have started using verjuice, its use is only limited by your imagination.

SPARKLING (bottle fermented) CHARDONNAY

Chardonnay is a traditional French Champagne variety, but this sparkler is designed to have some fruity characters and not aged yeast flavours and aromas. 

It is a wine for celebrations, an easy casual drink, an aperitif or with a meal. 

It is made in the traditional French way but is not intended to be a copy of a French product.

Limited production of 2006 vintage - only 250 bottles.

ARNEIS

A new alternative if you are tired of drinking Chardonnay, Sauvignon Blanc, Riesling or Semillon.

Arneis is a rare temperamental aromatic white variety grown in north west Italy.

 The name is a local word meaning "little rascal".  Its brittle canes and shoots have a frustrating habit of breaking while being handled, hence its name "little rascal".  These difficulties almost lead to its extinction until recently resurrected.

Traditionally a little Arneis was often blended with Nebbiolo to soften the wine, just as viognier is added to shiraz in France.

The juice from the freshly crushed Arneis tastes and smells like the syrup from preserved pears and peaches.

The wine has complex flavours and stone fruit characters with mineral highlights. 

It is a perfect partner for seafood and pasta or just on its own.

Our 2003 Arneis was awarded 3 1/2 stars in Winestate magazine, 2004 and 2005 vintages received excellent reviews and all sold out very quickly.

2006 vintage is available now and proving to be very popular.

FIANO 

          A very old variety grown around Naples in Italy but not much planted in Australia.  A bright, light gold colour with scents of apples and pears leading to honeyed beeswax as it warms up in the glass.  Full, rich and complex on the palate, lemony, citric with fresh fruit acidity almost sharp in a long mineral finish.

2006 vintage (our first) is now available - very small quantity available.

PINOT GRIGIO

          An increasingly popular variety worldwide.  Known as Pinot Gris in France and Pinot Grigio in Italy.  There are many styles of Pinot Grigio.  Ours is a green tinged pale gold colour with springtime freshness and rosy musk aromas.  The flavours are honey, nectarines, spice and pears with a lingering mineral finish.

VERMENTINO  

A tough white grape variety grown along the Mediterranean coast and island from Spain to Italy, especially Sardinia and is gaining popularity in Tuscany.  The wine is yellow gold with a fresh juicy mouthfeel, slightly aromatic citrus and herbal fragrances and is excellent with seafood.

2005 vintage selected in Top 100 Wines (New Whites) in the Advertiser (Adelaide) and sold out in a few months.

2006 vintage is now available and has already received very good reviews in Adelaide newspapers - very small quantity available.

South Australia

NEBBIOLO ROSE

We have used the same Nebbiolo grapes we normally make our red wines from to make a delightful rose.  It is a very pale pinkish-orange colour with an aroma of fresh strawberries lingering on the palate with fresh cleansing sherbet flavours.  Only 250 bottles available, so be quick if you want to try this new style.

2004 & 2005 vintages sold out. 

We will be making another vintage of Nebbiolo Rosa in 2007.

NEBBIOLO

Often referred to as the King of Wines and the Wine of Kings, Nebbiolo is a red grape variety from NW Italy. 

Nebbia means "fog" and it is often foggy in late autumn when the grapes are harvested.

Nebbiolo in Italy has traditionally been a long-lived tannic tar and roses wine needing a few years ageing to show its best.  This is changing with contemporary producers making earlier drinking styles with more fruit flavours.

Our 2001 Nebbiolo is a medium bodied red wine with fine mouth filling tannins and long lasting flavours of chocolate cherry liqueur, plum and liquorice enhanced by an aroma of rose petals.  Other flavours and aromas will develop as the wine ages in the bottle.

Our 2003 Nebbiolo is a bolder wine with similar flavours and aromas to our 2001 vintage overlaid with musk and Turkish delight characters.  This wine received 2 bronze medals in November 2004 (from Australian Alternative Varieties Wine Show and Australian Small Winemakers Show). There was only a very small quantity of the 2003 Nebbiolo and we only have a few dozen left in stock.

Enjoy the mystique of Nebbiolo with your friends and family.  Drink Nebbiolo with cheese, meats, pasta sauces or on its own.

NEGRO AMARO

Negro Amaro is a red grape grown on the hot dry lower east coast of Italy.  The name means black and bitter.  Negro Amaro has never been planted in Australia until now.

Parish Hill Negro Amaro is a pretty garnet colour  with a violet edge.  There are flavours of marzipan, ripe plum jam, and chocolate coffee liqueur that will develop with time.  A good match with pizza, pasta, hard cheese and dark chocolate.

DOLCETTO

Dolcetto is a red grape from the Piedmont region in NW Italy.

The word Dolcetto means “little sweet one” although the wine is not sweet. Dolcetto was once used as a table grape and was said to help medical conditions such as obesity, eczema, respiratory infections, and to tone the liver and kidneys when used as a sole diet for up to a week.

This friendly wine is light to medium bodied with an intense pretty ruby red garnet colour with purple tones.

It is a wine to drink within a few years of vintage.  A luscious fresh every day all through the meal drinking wine made without new oak with a dry pleasant slightly bitter finish. It can show zippy flavours of prune, cherry, aniseed, spice, raspberry, chocolate, fig, orange peel, violet, marzipan.
